Pea & Pesto Soup Print
1 cup green or yellow split peas, rinsed
2 - 3 Tbsp prepared pesto
1 & 1/2 cups water
1 cup sliced zucchini
1 (14 1/2 oz) can chicken broth
1 cup chopped green onion

Combine peas, broth and water in a large saucepan, bring to a boil.
Reduce heat, cover and simmer 15 minutes.
Stir in pesto, zucchini and green onion, simmer 5 to 10 minutes.
Garnish with shredded Parmesan cheese if desired.

Serves 4 (about 1 quart)
