Ham & Bean Soup |
12 - 16 ounces small dry beans (350 - 450 grams)
2.5 - 3 litres water 1 & 1/2 - 2 lb ham bone with some ham or 1 & 1/2 cups diced ham 4 - 5 medium carrots - diced 2 Tbsp brown sugar 1 Tbsp molasses 2 Tbsp vinegar 1 Tbsp chicken oxo 3 - 4 Tbsp onion flakes or 1 medium onion chopped and fried Add to taste: salt, pepper, marjoram, parsley and celery salt Adjust amounts according to amount of ham on bone Soak beans overnight in cold water. Add ham bone, onions, celery salt and bring to a boil. Reduce heat and simmer 1 & 1/2 to 2 hours. Remove bone, trim off fat and skin, cut meat into small pieces. Return ham to pot and add carrots, sugar, molasses and seasonings to taste. Simmer 1 more hour. Add vinegar and chicken oxo. |
