Canola Seed & Saskatoon Berry Beef Carpaccio Print
6 oz centre cut beef tenderloin
1 cup saskatoon berries
1 tsp cayenne pepper
6 cloves garlic, chopped
1 1/2 Tbsp honey
1/2 cup canola seeds
Salt & pepper to taste

Blend berries, cayenne, garlic, honey, salt and pepper in food processor to make paste and cover beef for 24 hours. Roll beef in canola seeds and sear in a hot pan or grill for 1 1/2 minutes on all sides of beef. Freeze for 4 hours or do a day ahead and thaw for 1/2 hour. Slice as thin as possible and serve on favorite type of crusty bread.
