Flax Pecan Chocolate Chip Cookies Print
Many people who do not want to consume trans fats or a high amount of saturated fats ask how to make a healthier version of their favorite dishes. This result is great!

3/4 cup oil
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp vanilla
2 cups all purpose flour
1 cup oatmeal
1/2 cup milled flax seed
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
1 1/2 cups pecans, chopped
3/4 cup chocolate chips

Mix oil and sugars until light and fluffy. Add eggs and vanilla and beat.
Mix flour, oatmeal, flax, salt, baking powder and soda together. Stir into creamed mixture. Add pecans and chocolate chips. Mix until blended. Form into one inch balls. Place on an ungreased cookie sheet, about 2 inches apart. Bake at 350°F for about 10 minutes.
Yields approx 6 dozen.
