Broccoli and Barley Soup |
1 Tbsp vegetable oil
1 medium onion, chopped 1 & 1/2 tsp minced garlic 2 carrots, diced 3 & 1/2 cups turkey or chicken stock 1/3 cup pot barley 2 cups chopped broccoli 1/2 cup 2% or skim milk 3 Tbsp chopped fresh dill, or 1 tsp dried dill weed 2 Tbsp grated Swiss, cheddar or mozzarella cheese In a 2 litre/quart microwave safe container, mix oil, onion, garlic and carrots. Cover and microwave at 100% (high) for 4 - 5 minutes, stirring once. Add stock, barley and broccoli. Cover and microwave at 100% (high) for 10 minutes, or until beginning to boil. Stir and microwave at 70% (medium) for 20 - 30 minutes, or until barley is tender, stirring once. Puree in food processor till smooth and creamy. Return to microwaving container and stir in milk and dill. Reheat at 100% (high) for 1 - 2 minutes if desired. Serve sprinkled with cheese. Serves 3 - 4. |
