Wholesome Lentil Soup Print
1 & 1/2 tsp canola oil
1 & 1/4 cup onions, chopped
1 cup celery, chopped
2 cloves garlic, minced
8 cups chicken broth
1 can (28oz) tomatoes, diced
1 can (10oz) undiluted tomato soup
2 cups brown or green lentils, washed
2 cups carrots, chopped
2 cups yams or sweet potatoes, peeled & diced
1 & 1/2 tsp dried oregano
1 tsp ground cumin
1 tsp salt
3/4 tsp ground coriander
1/2 tsp black pepper
1/8 tsp nutmeg
2 cups packed fresh spinach, chopped

Saute onions, celery and garlic in canola oil for 3 to 4 minutes.
Add remaining ingredients, except spinach.
Bring to a boil.
Reduce heat, cover and simmer for 30 minutes, stirring occasionally.
Add spinach and simmer for 15 more minutes.
Serve hot.
This is even better the next day!
