Bean Soup Print
20 ounces dry navy beans or other varied beans (soak overnight)
1.5 quarts water
1 pound lean, boneless ham, cut into cubes
1 tsp salt
1 tsp pepper
1/2 cup celery leaves
2 medium onions, chopped
3 large carrots, chopped
1 bay leaf (optional)

Drain the soaked beans. Combine all ingredients in crock-pot.
Cover and cook on low 8 to 10 hours.
NOTE: add extra 1 & 1/2 cup water and cook for the maximum amount of time if you didn't soak the beans overnight (it is recommended that you do take the time to soak them however).
 
Garlic Bean Soup Print
20 to 40 cloves of garlic, peeled
1 & 1/4 cup chicken broth
19 oz can white beans (ie: canellini) - undrained
2 Tbsp fresh lemon juice
1/2 tsp dried thyme
Salt & pepper

Place whole garlic cloves and broth in a large microwavable bowl.
Microwave until garlic is very soft (about 10 minutes on full power).
Put all ingredients in blender and puree until smooth.
Return to bowl.
Reheat in microwave for approximately 5 minutes.
Ladle into serving bowls and add toppings.

*Optional Garnishes (per cup of soup):
1/2 tsp chopped parsley
1 tsp crumbled goat cheese
1/2 tsp very dry sherry
 
Bean Soup in a Jar Print
Layer following in a jar:
1/4 cup pinto beans
1/4 cup split peas
1/4 cup white beans
1/4 cup kidney beans

Add seasoning packet made up of:
2 Tbsp dried onion
1 bay leaf
2 Tbsp parsley
2 Tbsp powdered beef broth
Dash of pepper

Add folowing directions on a small piece of papper tucked into the jar:
Wash and soak beans overnight.
Drain water and add once can of tomato soup and one can of water along with a pound of browned ground beef.
Simmer 20 minutes over medium heat.
 
Ham & Bean Soup Print
12 - 16 ounces small dry beans (350 - 450 grams)
2.5 - 3 litres water
1 & 1/2 - 2 lb ham bone with some ham or
1 & 1/2 cups diced ham
4 - 5 medium carrots - diced
2 Tbsp brown sugar
1 Tbsp molasses
2 Tbsp vinegar
1 Tbsp chicken oxo
3 - 4 Tbsp onion flakes or
1 medium onion chopped and fried
Add to taste: salt, pepper, marjoram, parsley and celery salt
Adjust amounts according to amount of ham on bone

Soak beans overnight in cold water.
Add ham bone, onions, celery salt and bring to a boil.
Reduce heat and simmer 1 & 1/2 to 2 hours.
Remove bone, trim off fat and skin, cut meat into small pieces.
Return ham to pot and add carrots, sugar, molasses and seasonings to taste.
Simmer 1 more hour. Add vinegar and chicken oxo.
